- Wash and dry whole chicken.
- Oil, salt, and pepper whole chicken.
- Consider using onions carrots and/or celery to put inside (and rest on/around) the chicken for flavor.
- Consider using sage, parsley, thyme, rosemary, lemon, and/or orange under and inside for flavor if desired.
- Roast chicken at 350 for 1 hour and 30 minutes OR start high (400) with a tinfoil over the top for 1 hour then remove for the last 20 minutes and cook at 375 until done.
